The proccess of this Purple Wush Wush coffee from La Esperanza farm in Ibagué, Tolima, begins with the meticulous selection of ripe Wush Wush cherries, ensuring exceptional quality. The cherries undergo a pre-fermentation process lasting various hours, preparing them for the next stage. They are then placed in anaerobic fermentation cans that breathe through hoses, where they ferment for 144 hours in cherry, developing unique and complex flavors. Following fermentation, the beans are sun-dried in canopies for one month, allowing them to reach the ideal moisture level. An 8 to 10-day stabilization period ensures the coffee's consistency and quality. This careful process results in a flavor profile rich with notes of blueberry, dark chocolate, cacao nibs, strawberry, and tamarind, making this Purple Wush Wush coffee a standout selection.
